Del variado mapa gastronómico de Miami lo primero que hay que decir es aquello de ‘‘crisol de los fogones de Iberoamérica’’, un santo y seña algo cursi pero que nos sirve para presentar los títulos de la cocina regional española en esta ciudad. Títulos, como en el caso del restaurante Ideas (2833 Bird Ave., Miami), recién inaugurado, que corresponden a una cocina regional española con perfil propio, inmensa y sobria: la cocina castellano-leonesa. Comanda los fogones el joven cocinero vallisoletano Alvaro Beade, una suerte de esforzado capitán ‘‘Alatriste’’ de la cocina castellano-leonesa que demanda a fuego y sartén la pronta reivindicación de esta cocina poco conocida ... for full article click here

The lentils are chilled, bits of red bell pepper flecked within, baby greens beneath. Aged sherry vinaigrette joins the cool salad tangle, plus three warm, tiny discs of octopus, all served in a white bowl with a high back — which it seems everyone is using these days. Nobody, though, is serving consommé of Serrano ham, or Carpaccio of king prawn, or braised veal cheeks as succulently soft as brisket after a good massage. QUE BUENA IDEA!!! ... SPANISH CUISINE

A former bastion of numerous Italian restaurants has welcomed a new owner and a new nationality to its walls. And the change is for the better. Ideas Restaurant — open just a month — doesn’t have a Spanish name, but its menu, its fish and flavors are all from Castilla & Leon, Spain. All dishes are prepared with Spanish products and the fish and seafood are flown in fresh from Spain. This old Coconut Grove house on Bird Road has been totally redone, looking larger within. Sconces provide indirect lighting against the marble tile floors, dark woods, white cloths and gauzy drapes.
